Baked Fillet Steak With Blue Cheese Whisky

Ingredients

* 4 good sized fillet steaks, whatever size you like
* 6 onions finely sliced
* 250g soft white cheese
* 8 slices smoked streaky bacon
* salt & pepper
* A good glug of Aberlour whisky 12 year old or any good single malt you can lay your hands on. One for the pot & two for the cook of course:-))
* Red wine & butter for deglazing
* Fresh thyme

Directions

1. Slice the onions & fry in a frying pan with a little oil & the fresh thyme until the onions are golden brown
2. Add the whisky & fry until the whisky has reduced & then leave to cool
3. Split the fillet steak in the middle to make a pocket & add the onions & a nice slice of blue cheese
4. wrap the steak with 2 slices of streaky bacon & place in a roasting pan.
5. preheat the oven on a just over medium-highish heat & cook the steak to your liking, anything from 5-15mins
6. Remove the steaks from the pan & deglaze with some wine & butter
7. Serve with seasonal veggies & potatoes of your choice & pour the juices over the top.
