Ingredients

* 1-1/2 pounds lean round steak
* 2 tablespoons flour
* 1/2 teaspoon seasoned salt
* 1/8 teaspoon paprika
* Vegetable cooking spray
* 1/2 cup beef broth
* 1/2 cup vegetable juice
* 1/4 teaspoon dried thyme
* 1 medium onion sliced
* 2 carrots cut into thin strips
* 2 stalks celery cut into thin strips
* 1 large leek cut into thin strips
* 1 tablespoon parsley

Directions

1. Cut steak into serving size pieces them fat. Combine flour, salt and paprika. Drench steak in flour mixture then pound steak with mallet. Cool skillet with cooking spray. Put pan on medium heat until hot. Brown steak on both sides. Remove and drain well on paper towel. Wipe pan drippings from skillet. Combine broth, vegetable juice and thyme in skillet. Bring to boil and return meat to skillet. Add onion then cover and reduce heat then simmer for 1 hour. After an hour add celery, carrots and leek then simmer uncovered for 15 minutes. Sprinkle with parsley.
