Mexicali Round Steak

Ingredients

1 1/2 lbs round steak, trimmed of fat
1 cup frozen corn
1/2-1 cup fresh cilantro, chopped,to taste
1/2 cup fat free low-sodium beef broth
3 stalks celery, sliced
1 large onion, sliced
1 (20 ounce) jar salsa
1 (15 ounce) can black bean or pinto beans, rinsed and drained
1 cup fat-free cheddar cheese
cooked white rice

Directions

Cut beef into 6 pieces.Place in slow cooker.Combine remaining ingredients, except cheese, and pour over beef.Cover and cook on low for 8 to 9 hours.Sprinkle with cheese before serving.Serve vegetables over cooked white rice.
