Ingredients

1 tablespoon vegetable oil
1 (1 lb) beef sirloin steak, cut into 1 inch cubes
1 onion, chopped
3 cloves garlic, minced
3 yellow squash, cut unto 1 inch chunks
1 (15 ounce) can great northern bean, rinsed and drained
1 (14 1/2 ounce) can diced tomato
1/4 teaspoon black pepper
2 cups loosely packed fresh spinach leaves
1 tablespoon grated parmesan cheese (or more)

Directions

In a large skillet, heat oil over high heat.Add steak, onion, and garlic.Saute 5 minutes, or until meat is browned, stirring frequently.Add yellow squash and saute 3 to 4 minutes, stirring frequently.Add beans, tomatoes, and black pepper, mix well.Cook 3 to 4 minutes, or until heated through.Just beore serving, stir in spinach and cook 2 to 3 minutes, or until spinach wilts.Sprinkle with Paresan cheese and serve.
