* 1 tsp EVOO
* 2 Tbl lemon juice
* 4 (4 oz) beef tenderloins about 1 ” thick
* 1 C finely chopped onion
* 1 C dry Marsala
* 2 Tbl chopped fresh Italian parsley
Directions
1. Heat oil in a large skillet over medium high heat
2. Add lemon juice and steaks; cook 8 to 10 minutes or to desired doneness
3. Remove steaks from skillet; cover to keep warm
4. Add onions and wine to juice mixture in skillet; cook 4 minutes or until liquid is reduced to about 1/2 cup
5. To serve, spoon onion mixture over steaks; sprinkle with parsley
