Sweet N Sassy Flank Steak

* 1 small white onion, diced
* 1 cup crushed pineapple with juice
* ½ cup fat-free beef broth
* 2 tsp dry ginger
* ¼ cup spicy BBQ sauce
* 1 tbsp liquid honey
* 1 tbsp Dijon mustard
* 2 tsp ground black pepper
* ½ tsp salt
* 2 large sweet potatoes, scrubbed and shredded
* 1 lb flank steak, well trimmed
Directions
1. Mix all ingredients but sweet potatoes and steak in a bowl until well blended.
2. Place the sweet potatoes in the bottom of a slow-cooker. Top with the flank steak.
3. Pour sauce over the top of the steak and potatoes.
4. Cover and cook on High 6-7 hours.
5. Shred steak with two forks and serve overtop wilted beet greens or spinach.
