Ingredients

1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs round steak, cut into serving pieces
1 tablespoon oil
1 (28 ounce) can diced tomatoes, undrained
1 medium onion, . sliced
1 (4 ounce) can green chilies, drained
4 medium red potato, peeled and quartered
4 carrot, cut in 1 in slices
2 tablespoons cornstarch
2 tablespoons water

Directions

Mix flour, salt and pepper.Dredge steak pieces.Heat oil in dutch oven, brown the steak.Add tomatoes and onion, stir.Place chilies over steak, bring to a boil.Reduce heat, cover and simmer 70 minutes.Add potatoes and carrots, cover and simmer 25 minutes more.Mix cornstarch and water, stir into pan.Bring to a boil, stirring, until thickened and bubbly.
